Now I’ve gotta transfer all my domains to Cloudflare. Ugh. How will this affect mx records? I’ve got my vanity domain acting as a front end to Google for work gmail and things?

It shouldn't affect anything. Just transfer them as-is to another DNS provider. The IPs the MX records are pointing to aren't changing
